01 - In a blender or food processor, combine the halved avocado, Greek yogurt, almond milk, lime juice and zest, maple syrup, and vanilla extract. Process until the mixture is exceptionally smooth and has a creamy consistency.
02 - In a medium mixing bowl, thoroughly combine the rolled oats, chia seeds, vanilla protein powder, and a pinch of salt. Ensure all components are evenly distributed.
03 - Pour the smoothly blended avocado mixture from Step 1 over the dry ingredients in the mixing bowl. Stir diligently with a spoon or spatula until the wet and dry components are completely and uniformly incorporated.
04 - Divide the combined oat mixture evenly between two individual jars or airtight containers. Securely cover each container and place them in the refrigerator to chill for a minimum of 6 hours, ideally overnight, to allow flavors to meld and oats to soften.
05 - In the morning, remove the overnight oats from refrigeration. Stir the mixture and add a small splash of milk, if necessary, to achieve the desired loose consistency. Artfully arrange your chosen toppings such as sliced strawberries, toasted coconut flakes, chopped pistachios, or additional lime zest. Present chilled.
