01 - Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 15 minutes, or up to 1 hour for enhanced flavor.

03 - Whisk together tahini, lemon juice, water, minced garlic, olive oil, and salt until a smooth consistency is achieved. Add additional water, a teaspoon at a time, if needed to reach a pourable texture.
04 - Divide the cooked brown rice or quinoa evenly among four bowls. Top each serving with sliced chicken, halved cherry tomatoes, diced cucumber, halved Kalamata olives, thinly sliced red onion, crumbled feta cheese, and chopped fresh parsley.
