# Directions:

01 - Heat a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking up with a spoon, until browned and no longer pink, about 4 to 5 minutes. Drain excess fat if necessary.
02 - Add diced onion and red bell pepper to the skillet. Sauté for 3 to 4 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add rinsed rice, frozen corn, and frozen peas to the skillet. Stir to mix evenly.
05 - Sprinkle kosher salt, black pepper, smoked paprika, dried oregano, and chili powder (if using). Mix thoroughly.
06 - Pour in chicken or vegetable broth and bring to a gentle boil over medium-high heat.
07 - Reduce heat to low. Cover and simmer for 15 to 18 minutes or until rice is tender and liquid absorbed.
