- Line an 8x8-inch baking pan with parchment paper to prevent sticking.
- In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt until thoroughly blended.
- Press the oat mixture evenly into the prepared baking pan. Refrigerate while making the gummies.
- In a small saucepan, pour fruit juice, then sprinkle gelatin over the surface. Let stand for 5 minutes to hydrate.
- Warm the juice and gelatin mixture over low heat, stirring until gelatin is completely dissolved. Stir in honey and pour into a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes until the mixture is fully set.
- Once firm, remove the set gummies from the dish and cut into small cubes.
- Remove the oat base from the fridge. Sprinkle evenly with gummy cubes, freeze-dried fruit, and freeze-dried candy. Press toppings gently into the surface.
- Chill the entire pan for an additional 10 to 15 minutes to help all layers adhere.
- Lift the mixture out using the parchment paper and cut into individual snack bars.
