01 - 8 slices whole grain bread, cut into 1-inch cubes

04 - 1 cup low-fat cottage cheese or Greek yogurt
05 - 6 large eggs
06 - 1/4 cup vanilla protein powder
07 - 2 tablespoons pure maple syrup or honey
08 - 1 teaspoon vanilla extract
09 - 1/2 teaspoon ground cinnamon
10 - 1/4 teaspoon salt

→ Topping

11 - 1/4 cup chopped pecans or walnuts (optional)
12 - 1 tablespoon turbinado or brown sugar (optional)

# Directions:

01 - Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish.
02 - Place bread cubes evenly in the baking dish. Scatter blueberries over the bread.
03 - In a blender, combine milk, cottage cheese or Greek yogurt, eggs, vanilla protein powder, maple syrup, vanilla extract, cinnamon, and salt. Blend until fully smooth.
04 - Pour the blended mixture evenly over bread and blueberries. Press gently to help bread absorb liquid.
05 - Sprinkle chopped nuts and sugar over the top, if using.
06 - Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes, until puffed and golden.
07 - Allow to cool slightly before serving. Serve warm; drizzle with extra maple syrup if desired.
