# Components:

→ Chicken & Marinade

01 - 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
02 - 2 tablespoons olive oil
03 - 2 teaspoons chili powder
04 - 1 teaspoon ground cumin
05 - 1 teaspoon smoked paprika
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon salt

# Directions:

01 - Set oven to 425°F. Line a large rimmed sheet pan with parchment paper or foil to facilitate cleanup.
02 - In a large bowl, whisk together olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice. Add chicken pieces and toss until evenly coated.
03 - Place the marinated chicken on one side of the sheet pan. Spread sliced red and yellow bell peppers, red onion, cherry tomatoes, black beans, and corn evenly on the other side. Drizzle vegetables lightly with olive oil and season with salt and pepper.
04 - Roast in the preheated oven for 25 to 30 minutes, stirring vegetables halfway through. Ensure chicken reaches an internal temperature of 165°F and vegetables are tender with slight charring.
05 - While roasting, prepare desired rice and gather toppings, such as shredded lettuce, cheese, salsa, sour cream, avocado slices, cilantro, and lime wedges.
06 - Divide cooked rice evenly among four bowls. Layer with roasted chicken, vegetables, black beans, and corn. Finish with lettuce, cheese, salsa, sour cream, avocado, cilantro, and lime wedges. Serve alongside tortilla chips or warm tortillas if desired.
