Ingredients
- Mousse: 2 large ripe avocados (peeled and pitted), 100 g dark chocolate (chopped), 3 tbsp unsweetened cocoa powder, 4 tbsp pure maple syrup (or honey), 2 tsp pure vanilla extract, pinch of sea salt, 3 tbsp unsweetened almond milk (or milk of choice)
- Topping: 125 g fresh raspberries, 1 tbsp dark chocolate (shaved or finely chopped, optional), fresh mint leaves (optional, for garnish)
Instructions
- Melt Chocolate:
- Melt dark chocolate in a heatproof bowl over simmering water or in the microwave, stirring until smooth. Let cool slightly.
- Blend Ingredients:
- In a food processor, blend avocados, melted chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt until smooth and creamy, scraping down sides as needed.
- Adjust Consistency:
- Add almond milk one tablespoon at a time, blending until your preferred mousse texture is reached.
- Taste Adjustment:
- Taste and add more maple syrup for extra sweetness if desired.
- Chill:
- Spoon mousse into four serving glasses or bowls. Cover and refrigerate at least one hour.
- Topping:
- Before serving, top each mousse with raspberries, shaved chocolate, and mint leaves as desired.
